I’ve never really cooked lentils before. I was initially thinking of making a lentil soup, but curry was calling my name. I planned on making it with diced tomatoes, but when I opened up the can I realized that in my haste at the grocery store I had bought diced tomatoes with garlic and pepper.
So, I improvised. Dinner was an experiment, and while it wasn’t the best thing ever it was good. It warmed my soul on this cold November night. And in that regard, it was a Sunday Dinner success.
